While food is our primary focus, service runs a close second, and our professional service
staff will make sure that your event runs smoothly.   The type of menu and style of service
will determine the exact staffing requirements.  
Servers, Station Attendants, Non-Alcoholic
Beverage Attendants, Bartenders, Dishwashers, and Captains are based on 5 hours
of
service, including 1 1/2 hours for setup and 1 hour for cleanup.

Servers/Station Attendants/Non-Alcoholic Beverage Attendants - $100 each
Bartenders - $125 each
Demonstration Chefs & Carvers - $
75 each
Site Chefs - $80 each

Dishwashers - $75 each

Captains - $115 each


Additional time is billed at $20 per hour for servers and attendants, and $25 per hour for
bartenders, $15 per hour for dishwashers.

Type A Catering requires staffing based on the following guidelines:
Heavy Hors D’oeuvres with Disposables - 1 server per 50 guests
Heavy Hors D’oeuvres with China - 1 server per 40 guests
Buffet Dinner with Disposables - 1 server per  36-40 guests
Buffet Dinner with China - 1 server per 24-30 guests
Plated Dinner (China only) - 1 server per 16-20 guests
Bartenders/Non-Alcoholic Beverage Attendants  - 1 per 75 guests
Site Chefs (Plated Only) - 2 per 100 guests
Front & Back Captains (China only) - 1 each per 200 guests
Dishwasher - 1 per 200 guests (venue specific)
